Opening Ceremony Olympic Feast - Mini Bubble and Squeak Balls
Bubble and Squeak is a yummy vegetable side dish with a very cool name! This recipe is for a very basic (2 ingredient) bubble and squeak but if you want to add some grated carrot or other veggies, feel free!
Mini Bubble and Squeak
makes 6 balls
2 medium potatoes, peeled and cut into chunks
200g cabbage, finely shredded
1. Boil potatoes until soft then mash with a knob of butter
2. Stir in cabbage
3. Transfer to a frying pan and fry for 15-20 minutes until browned
4. Leave until cool enough to touch, mould into oval/ball shapes
We also had parsnip and carrot sticks, baked in the oven at 180 for 30-40 minutes until golden brown.
